The "Milano" salami

SALAMI MILANO is the most representative italian salami. It is the most known and most sold salami in the world.

The salami is prepared with pork or a mix of pork and lean beef. The grinding procedure determines the famous "rice grain" aspect of the slice due to the red colours of the meats and the white colour of the fat.

The (maturation) period, called (seasoning) lasts from a minimum of 60 days up to 200 days for larger calibers.
