MORTADELLA, a product with centuries of history, is produced using a unique technique.

The production cycle calls for selecting the pork meats which are then finely ground until a creamy semifinished product is obtained.

Cubes of fat ("lardelli") are then added to this “cream”. The "lardelli" are obtained principally from the dicing of throat fat, surely the most prized fat of the pig. Everything is sacked, cooked in a dry air stove and then cooled.

The product presents a cylindrical form. The slice has a pink color and is spotted with well defined white cubes ("lardelli").

The product emanates an intense and unmistakable aroma. The flavor is full and sweetened by the "lardelli".
